Ancient Grain Salad with Blueberries

Ingredients
Salad Dressing
  • 1/4cup olive oil
  • 3tbsp apple cider vinegar
  • 2tbsp honey
  • 1/2tsp salt
  • 1/2tsp pepper
  • 1/2tsp honey mustard
  • 1/4tsp fresh thyme
  • 1/4tsp fresh mintchopped
Salad
  • 2cups quinoa, farro, or hard wheatberriescooked
  • 2tbsp Green Onionswhites and greens chopped
  • 1cup blueberries
  • 1cup red grapeshalved
  • 1/2cup green applechopped
  • 1/4cup celerydiced
  • 1/4cup baconcrisply cooked and crumbled
  • 1/2cup walnutstoasted and coarsely chopped
  • 1/4cup gorgonzola cheesecrumbled
  • 8oz baby spinach
Instructions
  1. Add salad ingredients into a large bowl except walnuts, cheese, and spinach. Toss to combine.
  2. For dressing, combine ingredients in a jar with a tight-fitting lid and shake well to combine.
  3. Pour dressing over salad and mix well. Top with walnuts and cheese. Serve over spinach.
