The American Air Force was founded on September 18, 1947. We’re celebrating the Air Force’s birthday with this fun recipe for Avocado, Shrimp, and Cucumber Bites, but it can be served any time of year for any celebration. This bite-size appetizer is quick to make and easy to eat without utensils which makes it the perfect party food!

Start by seasoning and cooking your shrimp and then make the avocado mash. Don’t skip the lemon juice! This helps the avocado keep it’s color and prevents it from browning. Place a bit of the avocado mash on 1/4 inch thick slices of cucumber and top with the shrimp. Garnish with more cilantro and serve. These babies will go fast, so make plenty. No one can resist avocado, shrimp, and cucumbers!

Instructions
  1. Toss shrimp in oil and creole seasoning and cook in a preheated, heavy-bottomed skillet until slightly blackened, about 2-3 minutes per side.
  2. Make avocado sauce. Cut avocado in half and twist to locate seed. Remove seed and use spoon to remove pulp from skin. Mash pulp with fork and add lemon juice, salt, cilantro, green onion, and cayenne pepper to taste. Gently mix.
  3. Slice cucumbers into 1/4 inch slices.
  4. Place spoonful of avocado sauce on cucumbers and top with shrimp. Garnish with chopped cilantro.
