This bite-size Avocado, Shrimp, and Cucumber appetizer is quick to make and easy to eat without utensils which makes it the perfect party food!

Start by seasoning and cooking your shrimp and then make the avocado mash. Don’t skip the lemon juice! This helps the avocado keep it’s color and prevents it from browning. Place a bit of the avocado mash on 1/4 inch thick slices of cucumber and top with the shrimp. Garnish with more cilantro and serve. These babies will go fast, so make plenty. No one can resist avocado, shrimp, and cucumbers!
