Baked Salmon and Sesame Glazed Broccolini Sheet Pan

  • 43 oz salmon fillets
  • 2pkg Mann’s broccolini
  • 2cups brown ricepre-cooked
  • 1 red bell peppersliced into strips
  • 1tbsp toasted sesame oil
  • 2 Green Onionssliced thinly
Soy Sesame Glaze
  • 1/2cup soy sauce
  • 1/4cup rice wine vinegar
  • 1/4cup honey
  • 1tbsp fresh gingerminced
  • 1clove garlicminced
  • 2tbsp toasted sesame oil
  • 2tsp sesame seeds
  • 1tsp onion powder
  • 1tbsp corn starch
  1. Preheat oven to 400 F degrees.
  2. Lightly oil a sheet pan. On one section of the pan, place the salmon. On another, place the pre-cooked rice.
  3. Toss Broccolini® with red bell pepper and 1 tbsp of toasted sesame oil. Place on sheet pan. Put sheet pan in the oven for 10 minutes.
  4. While the sheet pan is in the oven, prepare glaze by combining all ingredients and simmering over medium-low heat until it begins to thicken. Stir frequently.
  5. Remove sheet pan from oven after 10 minutes and brush Soy Sesame Glaze over salmon and Broccolini®. Stir rice. Return to oven for another 10 minutes.
  6. Plate each dish and garnish with green onion.
