Salad Ingredients
  • 1small red onionthinly sliced
  • 1can chickpeasdrained and rinsed
  • 1can black beansdrained and rinsed
  • 1package grape tomatoeswhole
  • 2 bell peppersdiced
  • 2cups Dandy® Celery Sticksthinly sliced
Dressing Ingredients
  • 6tbsp lemon juicefreshly squeezed
  • 1/2cup olive oil
  • 1/2tsp black pepper
  • 1/2tsp salt
  • 1head lettucechopped
  • parmigiano-reggiano cheese(or other hard cheese) grated for garnish
  • parsleyfor garnish
  1. Mix dressing ingredients together.
  2. Mix all salad ingredients together and toss with dressing.
  3. Make a bed of lettuce and top with salad/dressing mixture.
  4. Garnish with Parmigiano-Reggiano cheese and parsley.
