Let’s face it, that’s usually how we all make dinner most nights anyway. The simplicity of this meal will make the task of balancing kids and dinner much, much easier!

Not only is the prep and baking easy for this recipe, clean up is too! You will only dirty a total of 3 items… a knife, a mixing bowl, and a baking sheet. That’s it!

Because this meal is so simple to make and quick to clean up, it’s the perfect recipe for busy school nights. Whip it up and clean it up between homework and the kids’ sports practice and feel like the superhero you are for getting a nutritious, delicious meal on the dinner table!

Shrimp and Veggies Instructions

Before we get to the full recipe, let’s take a moment to discuss flavor. With a lot of fast recipes, you trade flavor for ease. But not this one. It packs a serious flavor punch! Shrimp, broccoli, and red potatoes work incredibly well together. It’s a classic combination for a reason. Old Bay Seasoning gives a nice zest to the shrimp and veggies. Radishes may seem like a surprising choice for a topping, but Dandy® Radish MiniSticks® add a mild spice that pairs amazingly well with Old Bay. Plus, they add texture and an enticing pop of color. And because Dandy® Radish MiniSticks® come pre-washed and chopped, they are a no-brainer for busy moms.

Simple Shrimp and Veggies Sheet Pan

Ingredients 

Shrimp Bake Ingredients

  • 10 small red potatoes quartered
  • 1 broccoli crown cut into small pieces
  • 1 bag frozen large shrimp uncooked and deveined
  • 4 tbsp olive oil
  • 2 tbsp Old Bay Seasoning

Toppings

  • 1 bag Dandy® Radish MiniSticks™
  • 3 tbsp cotija cheese

Instructions 

  • Pull the shrimp out of the freezer and run under cool water to remove ice. It is ok if the shrimp is still frozen.
  • Cut the broccoli and red potatoes.
  • Toss the shrimp, broccoli, and red potatoes in a bowl with olive oil and Old Bay seasoning. Toss to make sure all ingredients are coated evenly.
  • Spread shrimp mixture on sheet pan. Bake at 375 degrees for 30-35 minutes or until shrimp is fully cooked and potatoes are fork tender.
  • Sprinkle Dandy® Radish MiniSticks® and Cotija cheese on top when serving.
