This is the most delicious salad and it only takes 10 minutes to prepare!  It features escarole, apples, pears, and almonds.

We love to make this salad the night before, store it the refrigerator overnight, and enjoy it at work the next day. But because it only takes 10 minutes to prepare, it’s also easy to make in the morning if you forget to prep it the night before. Or, serve this salad before dinner. It’s an easy way to get a few more produce items into your family’s diet!

Escarole Fruit Salad

Ingredients 

  • 1 tbsp vinegar
  • 1 pinch salt and pepper
  • 2 Garlic clove Peeled & Smashed
  • 1 tbsp honey
  • 1 tbsp hazelnut oil
  • 2 tbsp olive oil
  • 1 escarole leaves
  • 1 apple slices
  • 1 pear slices
  • gorgonzola cheese
  • almonds

Instructions 

  • Mix vinegar, garlic cloves, hazelnut oil, olive oil, salt, pepper, and honey in a large bowl. Then remove garlic gloves.
  • Toss escarole, almonds, apple, and pear.
  • Top with gorgonzola or feta cheese.
