Cherry Salad Recipe | Minted Spring Mix & Bing Cherries

This week’s Produce Mom Pick is Bing Cherry!

June is the peak of cherry season, so why not celebrate with a lovely, light cherry salad?!  This Minted Spring Mix, Dark Sweet Cherries & Cantaloupe Salad recipe by our partner, Sage Fruit Company, is the perfect salad for lunch or a small snack on the back patio. The hint of mint added to this recipe is a wonderful, refreshing touch. Bing cherries are the preferred cherry variety for this salad, but any dark cherry will work just fine as an alternative!

  • 2 cups cherry pitted and halved
  • 5 oz spring mix
  • 2 cups cantaloupe cubed
  • 1/4 cup mint chopped
Cherry Mint Vinaigrette
  • 1/4 cup cran-cherry juice
  • 2 Tbsp white wine vinegar
  • 1/2 Tbsp lemon juice
  • 2 Tbsp olive oil
  • 1/2 tsp herbs de Provence
  • 1 tsp mint minced
  • 4 cherry pitted and cut in half

  • 2 cups cherry pitted and halved

Instructions
  1. Add all vinaigrette ingredients (except cherries) to a medium sized bowl
  2. Whisk all ingredients until they are well combined
  3. Add pitted and halved cherries to dressing
  4. Mix the four salad ingredients together and pour on dressing if ready to eat
  5. Refrigerate any leftovers
