California Waldorf Salad

  • 5oz baby spinachabout 6 cups
  • 1/3 cup yogurtplain, nonfat OR sour cream
  • 1/3cup mayonnaise
  • 2tbsp lime juicefreshly squeezed
  • 1tsp lime zestgrated
  • 2tsp curry powder
  • 1/2tsp honeyor sugar
  • 1/2cup celerythinly sliced
  • 1/2cup raisins
  • 3/4cup grapesseedless, halved
  • 1 appleunpeeled, cut into 1/3 inch cubes
  • 1/2cup pecanstoasted OR walnuts
  1. Place the yogurt (or sour cream), mayonnaise, lime juice, zest, curry and honey in a small bowl & whisk to combine.
  2. Place the celery, raisins, grapes, apple and nuts in a large bowl. Add about half of the yogurt dressing and stir to combine.
  3. Just before serving, add the baby spinach and toss to combine. Add more dressing if needed.
