  • 16oz baby portabella mushrooms
  • 2cloves garlicminced
  • 1small oniondiced
  • 1 bell pepperdiced
  • 4 roma tomatoseeded & diced
  • 1/4cup Parmesan cheesegrated
  • 1tbsp fresh basilchopped
  • 2tbsp olive oil
  • 1/4cup bread crumbs
  • 3/4cup mozzarella cheeseshredded
  • salt and pepperto taste
  1. Preheat oven to 375 degrees F.
  2. Heat olive oil in a large skillet over medium heat. Add onion, peppers, and garlic and saute for 4 minutes. Add tomatoes and cook for 2 minutes. Season with salt and pepper. Remove from heat and place ingredients in a bowl and cool.
  3. Fold in shredded mozzarella and basil.
  4. Place lightly oiled mushrooms on a baking sheet. Fill mushroom caps with a generous amount of mixture. Sprinkle with bread crumbs and Parmesan. Place in oven and bake for 20 minutes, or until filling is hot and mushrooms begin to soften. Serve hot.
