Pine nuts are crunchy, yet pleasantly textured and sweet tasting. They are quite an underrated nut in my opinion! Pine nuts are a great source of plant-derived nutrients, vitamins, and heart-friendly mono-unsaturated fatty acids, which aid cholesterol levels in our blood.
Don’t be scared of the high calorie count in pine nuts (approx. 225 calories in 1/4 cup serving). The majority of those calories come from the mono-unsaturated fatty acids, such as oleic acid, which lowers LDL cholesterol (bad cholesterol) and raises HDL (good cholesterol).
A 1/4 cup serving of pine nuts also has 5 grams of protein and a solid dose of iron, potassium, & magnesium!
