Rustic Apple Tart with Gala Apples

Ingredients
  • 1-1/2cups all-purpose flour
  • 2tbsp powdered sugar
  • 4oz butterchilled
  • 1 eggyolk
  • 6 appleGala, peeled and cored
  • 2cups apple juice
  • 1tsp cinnamonground
  • 1/4tsp nutmegground
  • 1cup sugar
  • 1/4cup cornstarch
  • 3/4cup watercold
Instructions
  1. Sift flour & powered sugar in a bowl. Cut in butter to make a crumbly mixture. Add yolk & 1 tsp water & mix.
  2. Form dough into ball & flatten slightly, then wrap in plastic & refrigerate for 15 minutes.
  3. Remove & roll into a 14 inch circle and set into greased 8 inch pan, leaving the edges hanging.
  4. In a saucepan over medium high heat, combine apples, juice, cinnamon, & nutmeg.
  5. Bring to a boil, then simmer until apples are tender. Remove apples & return mixture to boil.
  6. Dissolve cornstarch in cold water & add to apple juice mixture. Stir until glossy. Toss with cooked apples & let cool.
  7. Fill crust with filling & fold in hanging pastry. Bake for 40 minutes at 375 until golden.
