Sunburst Tomato Hummus Pita - The Produce Moms

The August #ProduceChallenge Calendar has started & NatureSweet Sunburst Tomatoes are this week’s #ProduceMomPick!  Known for their sweet & delicious flavor, Sunbursts are the perfect snacking food. My boys love Sunburst Tomatoes in their lunchboxes, for an after-school snack, or before their big game! Best of all, these tomatoes are low in calories & high in Vitamin C – an ideal produce choice!

Need a fun filled Saturday? Well, NatureSweet is bringing the Homegrown Tomato Challenge to INDIANAPOLIS! This event is a chance to showcase your small, medium, & large tomatoes to win $2000! Additionally, the Chef’s Challenge will give three participants the chance to demonstrate their tomato cooking skills by preparing a LIVE recipe in front of a panel of judges. The Produce Mom will be present & judging – I hope to see you there too!

  • 1 head romaine lettuce
  • 1 cucumber
  • 10 oz hummus
  • 1 container Sunburst tomatoes
  • 4 pita bread flat rounds
  • 3 tsp olive oil
  • 3 tsp red wine vinegar

Instructions
  1. Prepare vegetables by chopping romaine head, slicing cucumber & halving Sunburst tomatoes.
  2. Toast pita rounds in a hot skillet, about one minute on each side.
  3. Spread hummus over pita & top with romaine, cucumber, & tomatoes.
  4. Sprinkle with olive oil, vinegar, & salt and pepper to taste.
