Tangerine Spinach Salad

  • 5cups spinachrinsed and dried
  • 1cup bean sprouts
  • 2 tangerines(clementines or neapolitans) peeled & segmented
  • 1/3cup mushroomsshiitake, sliced
  • 1/3cup vegetable oil
  • 2tbsp soy sauce
  • 1pinch garlic powder
  1. Tear the spinach into bite size pieces and toss in a large bowl with the bean sprouts, tangerines and mushrooms.
  2. In a small bowl, whisk together the oil, soy sauce and garlic powder.
  3. Pour over the spinach mixture, toss, and let stand for about 5 minutes to let the flavors blend.
