  • 1 lb potato french fingerling potatoes, scrubbed and pierced
  • 1 cup mayonnaise
  • 2 tbsp vinegar
  • 1 tbsp barbecue sauce
  • 2 tsp sugar
  • 1 tsp salt
  • 3 pieces green onion green part only, chopped
  • 3 ribs celery chopped
  • 1/4 whole onion red, peeled and chopped

Instructions
  1. Microwave potatoes on HIGH for 4-7 minutes until cooked through but still firm. Set aside to cool.
  2. In a medium bowl, whisk together mayonnaise, vinegar, barbecue sauce, sugar and salt.
  3. Stir in green onions, celery and red onion.
  4. Cut potatoes in 1/2 lengthwise and toss with mayonnaise mixture.
  5. Refrigerate until ready to serve.
