Orange & Jicama Salad

Ingredients
  • 3 orangepeeled & cut into julienne
  • 1medium jicamaabout 3/4 pound
  • 1cup papayapeeled, seeds removed and cut into 1/4 inch cubes
  • 1/4cup red onionpeeled & diced 1/8 inch
  • 1/8 tsp cayenne pepperadjust to taste
  • 2tbsp lime juice
  • 1/2cup cilantrowashed & chopped
  • edible flowersfor garnish
Instructions
  1. Peel the jicama including the fibrous layer just beneath the skin.
  2. Slice the flesh into ΒΌ inch pieces.
  3. Then dice the jicama into 1/8 inch pieces.
  4. Place in a bowl.
  5. Combine remaining ingredients and mix thoroughly.
  6. Allow to chill 2 hours before serving.
Recipe Notes

Strawberry papaya is recommended but other fresh papayas may be substituted.
