  • 1 large papaya (use green papaya) about 4 cups
  • 1 jalapeno minced together with the red bell pepper
  • 1/4 cup red bell pepper minced together with the red bell pepper
  • 1 tbsp ginger root grated

Instructions
  1. Peel the papaya, remove the seeds, and cut into very fine strips.
  2. Mix all the ingredients together.
  3. Put into a clean jar and refrigerate overnight.
