  • 2 tbsp olive oil extra virgin
  • 6 medium red onion
  • 1/2 cup brown sugar
  • 1/2 cup red wine
  • 2 tbsp balsamic vinegar
  • 1 1/2 tbsp fresh thyme

Instructions
  1. Peel, core and slice the red onions. Heat olive oil in a large heavy pot over medium heat.
  2. Add onions and cook, tossing them gently for about 10 minutes.
  3. Add brown sugar and vinegars. Reduce heat to low and cook until juice is reduced to almost nothing and the onions are very soft but not mushy.
  4. Gently stir in the Thyme. Spoon the onion spread into sterilized jars and store in refrigerator for up to three weeks.
