  • 4 count clamshell lettuce
  • 1/2 medium red onion
  • 1 mango ripe, diced
  • 2 small plum tomato diced and seeded
  • 1/2 jalapeno minced
  • 3 tbsp cliantro chopped
  • 2 lime juiced
  • salt and pepper to taste
  • 2 small fish filets tilapia or salmon
  • olive oil as needed

Instructions
  1. Preheat outdoor grill or grilling pan to medium-high heat. In a medium bowl combine mango, tomatoes, jalapeño, cilantro and lime juice and season with salt and pepper.
  2. Brush the fish with olive oil and season with salt and pepper. Grill for 3 to 4 minutes per side (depending on thickness), until just opaque in the center. Set aside to cool.
  3. When slightly cool, chop into large chunks. Add to the salsa and fold carefully, not breaking up the fish. Place the mixture to the middle of the lettuce leaves and roll.
