  • lettuce use 4-count clamshell Tanimura & Antle Artisan® Lettuce
  • 1 clove garlic cut in half
  • 3 tbsp lemon juice freshly squeezed
  • 1/4 cup mayonnaise light
  • 1/4 cup parmesan cheese freshly grated
  • 1 tbsp olive oil
  • 1 tsp anchovy paste
  • 4 oz bread Italian
  • black pepper coarsely ground

Instructions
  1. Preheat oven to 400°.
  2. Cut bread into 1/2 inch thick slices. Rub bread slices, on both sides, with cut sides of garlic. Cut bread into 1/2 inch cubes; place in jelly-roll pan and spray liberally with cooking spray. Bake 10 minutes on a cookie sheet or until golden-brown and crisp.
  3. Cut, rinse and crisp lettuce.
  4. In large salad bowl, with wire whisk, mix together mayonnaise, Parmesan cheese, lemon juice, olive oil, anchovy paste and 1/4 teaspoon pepper.
  5. Add lettuce and croutons to dressing in bowl and toss to coat.
