Ingredients
Salad
  • 2cups cherrypitted & halved (I recommend using Rainier cherries)
  • 6oz baby spinach
  • 1 avocadocubed
  • 1/2cup feta cheesecrumbled
Dressing
  • 1/3cup cran-cherry juice
  • 2tbsp apple cider vinegar
  • 2tsp olive oil
  • 2tbsp mayonnaiselight
  • 1tbsp dijon mustardmild
Instructions
Salad
  1. Evenly divide the baby spinach between four salad plates. Top each salad with cherries, avocado and Feta cheese. Drizzle Cherry Dijonnaise on each salad before serving.
Dressing
  1. Add all the dressing ingredients to a medium size bowl. Whisk all the ingredients until they are well combined. Refrigerated any leftovers.
