Artisan Greek Salad

  • 2heads lettuceuse Tanimura & Antle ArtisanĀ® Lettuce
  • 2 red onionthinly sliced
  • 1-1/3cups tomatored or yellow teardrop tomatoes, halved
  • 1cup cucumbersliced
  • 1/2cup kalamata olivespitted and halved
  • Greek vinaigrette(see recipe below)
  • 1/4cup feta cheesecrumbled
Greek vinaigrette
  • 1/4cup red wine vinegar
  • 1-1/2tsp garlicminced
  • 1-1/2tsp lemon juicefreshly squeezed
  • 1tsp oreganodried
  • 1/4tsp salt
  • 1/2cup olive oil
  1. Cut core end of lettuce to release leaves; cut leaves crosswise in half. Rinse; drain well.
  2. Combine lettuce, tomatoes, cucumber, olives and onion in large bowl. Add Greek Vinaigrette, as desired, before serving; toss well. Top with crumbled Feta cheese.
Greek vinaigrette
  1. Combine vinegar, garlic, lemon juice, oregano and salt in bowl.
  2. Gradually whisk in oil until blended. Season with pepper.
