  • 32 oz pumpkin spice latte Bolthouse Farms beverage
  • 12 slices bread torn into 1" pieces (day old bread is best, but not necessary)
  • 2 tbsp coconut oil melted
  • 5 egg
  • 1.5 oz raisins
  • 1/4 cup pecans chopped
  • 1/3 cup turbinado sugar

Instructions
  1. In a large mixing bowl whisk together the Bolthouse Farms Pumpkin Spice Latte beverage & the eggs. Set aside.
  2. Spray a 9×13 pan (or closest size that you have) with oil. Arrange bread pieces in sprayed baking dish & then drizzle the melted coconut oil or butter over the bread. Sprinkle with raisins & pecans. Pour Pumpkin Spice Latte mixture over the bread & use a rubber spatula to lightly push down on the bread until it is fully covered with the liquid.
  3. Bake at 350° for 45 minutes, or until the top of the bread pudding springs back to the touch. Remove from oven & immediately dust the top of the bread pudding with the turbinado sugar.
Recipe Notes

You may substitute Hawaiian rolls for bread slices and butter for coconut oil.

I like to put a small scoop of frozen vanilla yogurt on top of my bread pudding!
