It’s a great time of year to enjoy onions & one of my favorite ways to enjoy this veggie is to slow cook or caramelize them! Here’s what you need to make sweet caramelized onions – one of my very favorite additions to sandwiches, pizzas, burgers, salads – I’m just convinced they make everything taste better! Don’t like onions? I bet you would like caramelized onions! I DARE YOU to try ’em 😉

- 3 lbs sweet onion sliced
- 3 tbsp olive oil
- salt to taste
- water if necessary
Ingredients

- Over medium high heat, warm the olive oil in a large sauté pan. Add the onion slices to the pan & toss to coat evenly with the olive oil. Reduce heat to medium or medium low & stir occasionally.
- After 10 minutes, add salt to taste. Continue to stir & cook over medium-medium low heat. Onions will need to cook for an additional 30-50 minutes. You can add a few tablespoons of water to the pan if the onions get too dry. Also, add some more oil if the onions appear to be burning vs browning.
- Use your spatula to scrape the bottom of the pan & continue to cook, scrape, & stir until you have onions that are a rich brown color & taste sweet!
