Cherry Bruschetta

  • 18slices baguette1/2″ thick slices
  • 1+1tbsp olive oil
  • 1-1/2cup cherrysweet dark red or Rainier cherries, pitted & coarsely chopped
  • 1/4cup cilantrochopped
  • 1/4cup yellow bell pepperdiced
  • 3 green onionchopped fine
  • 2tbsp lime juice
  • 1tsp lime zest
  • 1/2tsp garlic salt
  • 1/4tsp pepper
  • 2oz mozzarella cheesefresh, sliced thin
  • 8leaves basilsliced thin julienne strips
  1. In a large mixing bowl, toss together cherries, cilantro, yellow pepper, green onion, lime juice, lime zest, garlic salt, pepper & 1 tbsp olive oil. Mix well.
  2. Toast one side of baguette slices at 350 for 5 minutes. Turn slices, brush with remaining olive oil & bake an additional 5 minutes.
  3. Top each slice of toasted baguette with a thin slice of fresh mozzarella cheese, a heaping spoonful of cherry mixture & garnish with fresh basil. Serve warm or cold.
