Cherry Herb Sauce with Duck - The Produce Moms

For an elegant way to enjoy Cherry Season… try Chef Concetta‘s Duck with Cherry Herb Sauce.  It’s surprisingly simple to prepare Duck Breast & it’s absolutely delicious.  This cherry herb sauce is super versatile & can easily be used with pork, chicken or even beef.  But, I agree with Chef Concetta – it’s best served over Duck.  And I promise you, it’s very easy to prepare duck.

  • 2 duck breast
  • 1-1/4 cup cherry pitted & halved
  • 1 shallot minced
  • 1/2 cup chicken stock low-sodium
  • 2 tbsp orange marmalade
  • 1 tsp rosemarry chopped
  • 2 tbsp butter unsalted
  • salt and pepper to taste

Instructions
  1. Score the fat of the duck breast, in a cross-hatch or checkerboard pattern. Season duck with salt & pepper. Place duck breast in a cold saute pan, skin side down & turn heat to medium. Cook skin side down for 8 to 9 minutes, until fat has rendered & skin is browned and crispy. If the fat builds up in the saute pan, spoon out and reserve in a bowl. Turn duck over & cook for 2 to 3 minutes for medium-rare. Remove from heat & transfer to a cutting board to rest.
  2. In a small saucepan, heat 1 tbsp of reserved duck fat. Add shallots & garlic. Cook for 4 minutes. Add chicken broth, cherries, orange marmalade & rosemary. Cook, while stirring regularly, for approximately 10 minutes or until sauce is slightly thickened. Remove from heat & stir in butter. Season with salt & pepper to taste.
  3. Cut the duck crosswise, on an angle. Place on plate & spoon sauce on top. Enjoy!

Chef Concetta recommends cooking your duck skin-side-down over medium heat for 8 to 9 minutes & then on the reverse side for another 2 to 3 minutes.
