Kale & Bok Choy Stir Fry

Ingredients
  • 2tbsp sesame oil
  • 1/2tbsp gingerfreshly grated
  • 3large green onionsliced at a bias 1/2″ size
  • 5oz kaleI recommend Earthbound Farm Mixed Baby Kales
  • 2cloves garlicminced
  • 2heads baby bok choyseparated & cut crosswise into 1″ wide strips
  • 2tbsp mirin(Japanese sweet wine)*
  • 1/2tbsp sesame seeds
  • 1dash toasted sesame oilgarnish
Instructions
  1. Heat a large skillet or wok over medium heat and add the sesame oil, ginger, garlic and green onions. Cook until fragrant, stirring constantly, about 1 minute.
  2. dd the baby kale, bok choy and mirin to the skillet, raise the heat to medium-high, and stir fry until the kale has wilted and the bok choy is crisp-tender, 4 to 5 minutes. Season to taste with salt.
  3. Transfer the mixture to a platter and sprinkle with sesame seeds. Drizzle with toasted sesame oil (optional) and serve immediately.

*I didn’t have Mirin at home & didn’t want to run to the grocery store – I substituted 2T Riesling.
