Kale & Bok Choy Stir Fry | Easy Stir Fry Recipe

One of my very favorite products in the produce department is Earthbound Farm Mixed Baby Kale!

We all know the nutritional benefits of Kale, plus it’s become so popular – it’s like the new bacon of the culinary world!  I feel like all the chefs on television are incorporating it into their recipes.  Makes me smile 🙂  Kale is considered a superfood & is a leading source of Vitamin A, Vitamin C, a good source of Calcium and Potassium & totally figure-friendly: notable fiber content, saturated fat free, cholesterol free AND low sodium!

The Earthbound Farm Mixed Baby Kales makes it easy to enjoy this superfood & incorporate more Kale into your diet.  One of the most tedious steps of enjoying any produce item is washing it.   All Earthbound Farm salads eliminate this step by providing consumers with prewashed, organic greens.  I love Kale, but mature Kale can be bitter & often must be sauteed or baked in order to be palate pleasing.  The Mixed Baby Kales from Earthbound are tender & are very pleasing raw; yet hearty enough to saute or bake as you would mature kale!

Ingredients
  • 2 tbsp sesame oil
  • 1/2 tbsp ginger freshly grated
  • 3 large green onion sliced at a bias 1/2" size
  • 5 oz kale I recommend Earthbound Farm Mixed Baby Kales
  • 2 cloves garlic minced
  • 2 heads baby bok choy separated & cut crosswise into 1" wide strips
  • 2 tbsp mirin (Japanese sweet wine)*
  • 1/2 tbsp sesame seeds
  • 1 dash toasted sesame oil garnish

Instructions
  1. Heat a large skillet or wok over medium heat and add the sesame oil, ginger, garlic and green onions. Cook until fragrant, stirring constantly, about 1 minute.
  2. dd the baby kale, bok choy and mirin to the skillet, raise the heat to medium-high, and stir fry until the kale has wilted and the bok choy is crisp-tender, 4 to 5 minutes. Season to taste with salt.
  3. Transfer the mixture to a platter and sprinkle with sesame seeds. Drizzle with toasted sesame oil (optional) and serve immediately.
Recipe Notes

*I didn’t have Mirin at home & didn’t want to run to the grocery store – I substituted 2T Riesling.
