Grilled Caesar Salad - The Produce Moms

I love my job for so many reasons… the biggest reason, though, is my customers!  I have been privileged to work with the entire gamut of grocery stores: from the high-end Sunset Foods in Chicago’s North Shore, to some of the Mexican bodegas that are tucked away in neighborhoods on the west side of Indianapolis.  Today I will share a recipe from Sunset Foods’ Executive Chef, Ken Chaffin.  Next week I’ll do a recipe from my local bodegas.

  • 1 romaine lettuce heart
  • caesar dressing
  • asiago cheese shredded
  • parmesan cheese shredded
  • panko bread crumbs

Instructions
  1. Slice romaine Heart in half, lengthwise.
  2. Using a pastry brush, spread dressing liberally over the open-faced side of the romaine heart.
  3. Mix together panko bread crumbs & cheese – spread evenly on top of dressing.
  4. Lay romaine heart face-down on a preheated grill pan or flat top. Allow it to cook for approximately 3 minutes, until the cheese is brown.
  5. Enjoy!
